Cave Spring Cellars Riesling Icewine 2017 375ML

Explosive aromas of Sultanna raisins, poached pear and comb honey rise overtop nuances of apple crumble and candied orange. The palate starts off lusciously sweet with unctuous flavors of pineapple, dried apricot and mandarin orange. A citrus note and discrete thread of acidity tightens the mid-palate and balances a lengthy, intense finish replete with nectarine, fresh honeycomb and allspice.

100% Riesling

This wine originates from Riesling grapes left to raisin on the vine during late autumn with further concentration occurring when the berries were frozen solid by the onset of winter. Selectively harvested and pressed at temperatures below 14F (-10C), they produced a nectar-like sweet wine with an impeccable balance of acidity. 

Cave Spring was first named by European settlers in the late 18th century for the limestone caves and mineral springs found on the site. Nestled along a terrace of the Niagara Escarpment and overlooking Lake Ontario, known as the Beamsville Bench, the area has proven ideal for cool-climate viticulture.
